Cut all the ingredients into equal sized cubes about 1/3 inch thick. Pour boiling water over the diced potatoes, drain and wipe dry, this will help them cook without sticking together. Fry in oil, stiring constantly and checking the heat so as to brown very lightly. Sweat and slightly brown the onions in 1 tablespoon of butter. Cook the trimmed beef in the same manner. When almost cooked, combine all the ingredients and continue to cook for a few minutes. Season with salt and pepper, sprinkle with chopped parsley. Serve on small individual plates. You can place 1 egg yolk, in its shell, in the center of each plate. Each guest can stir the egg yolk into the shepherd╒s pie. Serve with a highly seasoned, green salad.
